Oh goodness. Meals do not have to be hard! Repeat. Meals do NOT have to be hard!
This yummy recipe has THREE ingredients for the chicken, and it doesn't matter how much chicken you have!
Ingredients:
Chicken (Bone-In Thighs from Butcher Box were used, but any chicken will work!)

Simply Organic Garlic Salt (buy here)
Cooking Oil - I love Primal Kitchen's Avocado Oil (here), or Tamia's EVOO (I find it at Central Market)
Directions:
If chicken is frozen, defrost desired portion overnight in the fridge. I recommend placing the chicken in a glass pan or on a plate to catch any thawed juices!
Line a stainless steel baking sheet with parchment paper. If you don't have stainless, aluminium will do, but PLEASE line with parchment paper!
Preheat oven to 400 degrees.
Line chicken on pan, and drizzle oil across chicken. Turn chicken over and ensure all outsides are rubbed down in oil. (If you don't want to get your hands all oily, grab a zip lock back, drop the chicken in, and drizzle in the oil, close bag, and squish around til coated!)
Generously sprinkle chicken in garlic salt on both sides.
Bake chicken in oven for 30-40 minutes, or until internal temperature has reached 165 degrees.

It's honestly delicious straight forward flavorful chicken. I like to set my first timer for 20 minutes to see how far along the chicken is to ensure I don't accidentally end up with dry chicken!
